History of the Stall


The origins of Ah Ter Teochew Fishball Noodles can be traced back to the 1950s, when Gilbert’s grandfather (林猪乳) came to Singapore as an immigrant seeking a better life.

He started making a living through making fishballs by hand, before opening a food stall at Maxwell Food Centre in 1958. This original stall was called 亚猪鱼圆肉脞面, literally translated as Asian Boar Fish Ball and Minced Meat Noodles.

The stall was eventually relocated to Amoy Street Food Centre. After Gilbert’s grandfather retired, the stall was taken over by Gilbert’s father Ah Ter, which is why the stall is now called Ah Ter Teochew Fishball Noodles (a better name if you ask me).

Gilbert: Handsome Third-Generation Hawker


Today, the stall is helmed by Gilbert, a proud third-generation hawker. He was once a trader and also worked in construction, but found it hard to detach his life from the family business which has fed his family for three generations. Therefore, his love for his grandfather, father, and fishball noodles made him decide to give up his other pursuits and focus his energy on running the stall.

I am glad he made this decision because it means that Amoy Food Centre patrons will still be able to enjoy the delicious fishball noodles for some time to come! And of course, OLs will be able to watch a brawny handsome man with black luscious hair preparing noodles for them – a feast for both the eyes and stomach.

Sumptuous Fishball Noodles





I will usually order the Medium Fishball Noodles ($5), which consists of a bowl of soup and a separate bowl of noodles.

For the noodles, I normally go with mee kia, which is very springy with just the right amount of bite. It tastes great with the stall’s signature handmade chilli, which is prepared by stir frying dried shrimps, shrimp paste and onions for six hours continuously. Now that’s one good chilli paste!

I love the sumptuous bowl of soup too. It has many ingredients such as minced pork, prawn, pork liver slices, fish cake slices, fish balls and meat balls.

I like that the minced meat, meat balls, and liver all taste very fresh and chewy, unlike those in other fishball noodles which can sometimes be a bit stale. This is probably because the ingredients are bought fresh daily from the market at 3am.

The fishballs are handmade by Gilbert’s father using fresh saury fish, due to the family’s dedication to producing quality Teochew food. No wonder they tasted delicious.

The soup base has a very rich and savoury flavour, which is not surprising considering that it is stewed for a long period with pork ribs.

Conclusion


Personally, I feel that Ah Ter Teochew Fish Ball Noodles stand outs because of its dedication to offering simple but quality food. They use the same ingredients as any other fishball noodles hawker but they cook the food with heart: making the fishballs by hand, buying fresh ingredients from the market daily, and preparing their signature chilli paste using a six hours process. The result is a bowl of scrumptious noodles that have satisfied innumerable customers for six decades since 1958.
