One Prawn Noodle – Penang Style Prawn Noodles with Lovely Umami Flavour, Opened By Ex-Chef Of Burnt Ends
Recently, I have been checking out various prawn noodle eateries in Singapore, and my latest discovery is One Prawn Noodle at Golden Mile Food Centre.
One Prawn Noodle is a hawker stall located on the first floor of Golden Mile Food Centre. It serves fusion prawn noodles that are inspired by the flavours of Penang style prawn noodles, Japanese tonkotsu, and prawn bisque.
The stall is helmed by Gwyneth Ang, who studied culinary arts at Temasek Polytechnic and The Culinary Institute of America, before going on to work at various high-end restaurants like Burnt Ends, Tong Le Private Dining, and Forlino.
With over 10 years of culinary experience under her belt, she decided to open up her own prawn noodles stall in May last year.
Incidentally, One Prawn Noodle reminds me of A Noodle Story, another hawker noodle stall that is headed by ex-chefs of big name kitchens.

For first timers, One Prawn Noodle recommends ordering their signature Sliced Pork Prawn Noodle ($5), which comes with prawns and shabu shabu pork.
The other prawn noodles options come with toppings like pork ribs, pork intestines, pork skins, and pork tails.
If you are feeling ravenous, go for their Super Prawn Noodle ($9) which includes every single type of topping.
All noodles are available in dry and soup versions.
There are many types of noodles available: Mee Pok, Mee Kia, Thick Bee Hoon, Thin Bee Hoon, Yellow Mee, and Kway Tiao.
In keeping with the tradition of eating prawn noodles with ngoh hiang, One Prawn Noodle also serves a small selection of ngoh hiang items. You can check out the menu and prices.
Sliced Pork Prawn Noodle
I ordered the signature Sliced Pork Prawn Noodle ($5), which took 10 minutes to be served. This was a rather long wait considering that no one else had ordered before me.
The highlight of the dish was definitely the red-hued broth, which was full-bodied with a rich umami flavour, velvety smooth texture, and pleasant sweetness.
To achieve this rich depth of flavour, the broth is brewed for hours with copious amounts of prawn shells and pork bones.
The two medium-sized prawns were very fresh and sweet, and I was glad that they came peeled. The prawn heads are left intact for those who enjoy sucking up their juicy goodness.
The most interesting aspect of this dish was the shabu shabu pork (thinly sliced pork belly), which was very tasty and went really well with the broth.
The hard boiled egg slices was another interesting topping, with the egg yolk adding some extra texture and flavour to the broth.
Note that the dish comes with bean sprouts by default, so remember to request to exclude them if you’re not a fan of this vegetable.

Conclusion
One Prawn Noodle serves up a great bowl of fusion prawn noodles that is packed with complex flavours and executed well. While I really enjoyed it, I suspect that people who are more accustomed to the taste of traditional Singapore-style prawn noodles (such as Blanco Court Prawn Mee) may not like it as much.
