Fu Shun Jin Ji Shao La Mian Jia 福顺錦记烧腊面家 – Hawker Sells Roast Pork With ASMR-Worthy Crackling Skin
Fu Shun Jin Ji Shao La Mian Jia (福顺錦记烧腊面家) is a roast meat stall at Maxwell Food Centre that sees a snaking queue every day. Expect to wait at least 30 minutes if you go during peak hours. I visited the stall last weekend with the hope of avoiding the long queue.
This stall was founded in 2008 by Mr Chan Tuck Kwai (Ah Kwai), who has been roasting meats since he was a teenager.
I went down last Saturday at 12.15pm, thinking that there would be no queue on a weekend. I was wrong – there were around ten people waiting in line when I visited, and I had to wait 20 minutes to get my food.
Menu
Fu Shun Jin Ji serves roast pork belly (also known as siew yok or sio bak), roast duck, and char siew. You can mix and match the meats, and pair them with noodles or rice.
For the char siew, you can request for lean or fatty cuts.
Prices are affordable, starting from $3 for a plate of char siew rice or roast meat rice.
The menu also offers wanton noodles and dumpling noodles, but the stall is not known for these dishes.
If you’re interested, the stall sells larger quantities of their roast meats separately.
Mixed Meat Noodle (Roast Pork Belly & Char Siew)
I ordered the large portion Mixed Meat Noodle ($5), which consists of roast pork belly and char siew served with egg noodles.
The lean char siew was nicely caramelised with a slight char around the edges. It had a savoury-sweet flavour with a smoky charred aftertaste. Overall, I found the char siew to be above average but not fantastic.
The roast pork had a good fat-to-meat ratio, and was tasty and tender.
However, I was slightly disappointed to see that some of the roast pork had been served with the skin placed on the side. I mean, it would have been more satisfying to savour the meat together with the attached crispy skin.
Nonetheless, I still really enjoyed eating the juicy crackling skin which was armed with a super satisfying crunch and a sweet-savoury taste – one of the best crispy pork skin I’ve had in Singapore.
The egg noodles (the type used for wanton mee) were tasty and went well with the meats. I mixed in the chilli for a nice spicy kick.
If you can’t take spicy food you can ask the uncle to exclude the chilli.
Conclusion
Fu Shun Jin Ji Shao La Mian Jia serves decent roast meat that are not fantastic but certainly above average. The prices are affordable, and portions are generous. The must order meat here is the roast pork, because of its amazing crackling skin. I will update this article once I’ve tried their roast duck too. To avoid the long queue, you can go on weekends or during non-peak hours on weekdays.
